Full Time (40 hours)

 

To assist the continued growth of Sunderland AFC whilst developing our core business. The Executive Head chef will exceed stakeholder expectations in terms of innovation and new ideas, both through the development of innovative menus, suitable for a range of business offerings, whilst understanding the wants and needs of both internal and external customers. The EHC will lead in all culinary areas of the business with full autonomy and accountability, while driving output and leading on specific projects and required elements with the General Manager - Catering and Events. 

 

Core Responsibilities & Accountabilities:

  • The presentation of ideas clearly, accurately and persuasively to achieve the level of culinary excellence throughout the business.
  • Identify ways to further expand and reinvent core business through new products or processes.
  • Consistently develop innovative, high quality commercially viable products.
  • Plan and organise the department to deliver concepts to an agreed quality and timescale.
  • Ability to challenge current products and processes and improve and upgrade where necessary.
  • To ensure we maintain a 5-star hygiene rating across all areas of the Business.
  • Bring forward innovation and new ideas to implement to give our business USP’s vs our competitor set for our target markets and sectors.
  • Responsible for ordering all in-coming goods for the kitchen and other related areas.
  • To oversee ordering and maintain correct stock levels within the kitchen.
  • To maintain GP% rates within company requirements.
  • To write and prepare menus for the business needs.
  • To effectively manage and implement the rota and labour costs for the kitchen.
  • To liaise with the stock taker in compiling stock reports.
  • To apply recruitment and training within the company guidelines.
  • To ensure that stock is stored and rotated correctly.
  • To apply and maintain HACCP and COSHH systems in line with company procedures and specifications.
  • To ensure food is prepared, cooked, and served within food hygiene legislation parameters.
  • To ensure that food for re-generation is cooled in line with specifications.
  • To ensure safe practice within the kitchens in line with health and safety policies.
  • To ensure the delivery and distribution of food through the satellite kitchens within the facility.
  • To regularly liaise with the General Manager as and when required.
  • Ensure the equipment within the kitchens is well maintained.
  • To report any defective equipment to the General Manager/Facilities to enable repair.
  • To devise control sheets for the testing of food, within company specification.
  • Effectively cost all menus to ensure margins are achieved.
  • To assist with mobilisation of future contracts as required.
  • Create effective spec sheets for all menus as required.
  • Be aware of all current and future legislation that can impact the operational aspects of the Business

Leadership Responsibilities:

  • To instil passion and enthusiasm into the Sunderland AFC team to achieve a high level of culinary and service excellence.
  • To develop relationships and support with management of all relevant key stakeholders including suppliers, staffing, contractors, clients and customers.
  • To supervise the match-day kitchens within the facility.
  • To manage the kitchens during events within the facility.
  • To be responsible for the development and wellbeing of all kitchen staff.
  • Keeping the Board, business and own team aware of current and future food trends and relevant updates.
  • Oversee the cleaning plans for all kitchen and facilities within each site.
  • Support the General Manager with Business growth including but not restricted to, building of profit and loss accounts, tenders for new business, concepts new to market.

 

The position is full time (40 hours per week), the availability to work flexible is essential to suit business needs. Additionally, you are required to work all home fixtures and special events unless previously agreed with your manager.
